simple supper-cream of tomato soup


One of my favorite summer meals is soup and salad with  garlic bread.  We enjoy quite a variety of fresh summer soups  made from garden produce and one of my favorites is cream of tomato. There are oodles of recipes out there for making soups but I do not tend to use one. Depending on  my mood and what I am up for depends on how I make it.  The base recipe I use for all my cream  of  tomato  soups   follows.We generally eat the soup as a plain soup  but it it also good with  rice in it, cheese on top, veggies thrown in or with different herbs  thrown in. The last time we had  our simple supper I served it with a simple cuke salad(ranch dressing,  cukes, green onion, salt  and pepper) and some cheesy toast.


To prepare the tomatoes  for the soup I blanch them for a minute,  peel and whirl in the blender or food processor along with the onion  and garlic
3 cup cooked tomatoes
1 onion
1 clove  garlic
1 tsp. salt
1 tbsp. sugar
1/4 tsp. pepper
3 Tbsp. flour
2 Tbsp. butter
1 qt. milk
 melt butter in  large pan, add flour  stir and add 1 cup milk, stir until thick and add remainder of milk and rest of spices. Throw in tomato mixture, stir and heat.

  1. I've never been a huge fan of tomato soup except once when a friend made me home made tomato soup. It had a totally different taste from the canned stuff. A wonderful treat. Our tomatoes aren't quite ready yet, but I will try this. I hadn't realized how easy it was. Thanks.

  2. that looks like a tasty whole foods dinner!

    when we were first on our own we lived off a case of canned tomato soup & boxes of macaroni. it worked as survival food for a while til we learned to cook. fresh is so much better, way too much sodium in the canned.


    tomatoes are just ripening here, cukes & basil are ready too...so it's time for a nice cold garden gazpacho.

    manthing is going to miss your good cooking when he is out on his new job. hope it all works out great for you two.

  3. homemade tom. soup is nothing like canned.. it actually tastes like a tomato still :)

    Michelle, getting ill from the crap foods is one of his bigger worries but i do not see a way to send him food for 5 days at a time on the road. I suggested maybe hitting a store and buying what he can that he thinks he can stomach and making it in the hotel room but they dont get off work til quite late so i guess he has to learn to eat yukky food again.

  4. How do you eat soup in the summer?! Do you have a/c? I think I may be more sensitive to humidity then some? Anyways that looks awesome..I think I might have to wait until fall tho! If you get a chance to visit my blog that would be dandy :)

  5. GFG, no no air cond here. We tend to not eat our soups hot but rather barely warm most of the time so it actually makes a nice meal in summer. I actually do not mind room temperature for most soups and many in the summer we eat chilled. Winter we tend to eat them warmer just to warm the bones.. I visited the blog.. yippee another i can watch and follow..i love seeing folks do all they can for self sufficiency and sustainability..
